Healthy Baked Parmesan Tomatoe Recipe
Looking for a low-carb snack or appetiser that can compete with breaded ones? Introducing baked Parmesan tomatoes. Tender, cheesy, herbaceous, delicious. I couldn’t resist these! They could have been my main course.
I prepared these with giant tomatoes that you can slice, but you can make them smaller for bite-sized pieces. It makes a unique appetiser or snack for guests! One of those baked delicacies that tastes great after cooling on the appetiser table.

Ingredients
- 2 large tomatoes (cut into 3 slices each)
- ½ cup Parmesan cheese (grated)
- 1 teaspoon oregano (dried)
- ¼ teaspoon salt (or to taste)
- ¼ teaspoon pepper (or to taste)
- 1 tablespoon olive oil (for drizzling over the top)
- parsley ( chopped, for garnish)
Instructions
Set oven temperature to 400°F. Combine the dried oregano, salt, pepper, and Parmesan cheese in a small bowl.
Assemble: Evenly spread the Parmesan cheese mixture over each tomato slice. It’s optional to drizzle a little olive oil over everything.
Bake: Bake for five to ten minutes, or until the cheese begins to melt and turn a golden brown colour. If you would want the cheese to have a little more colour, you can also place it under the grill for approximately a minute.
Serve with garnish: Add parsley as a garnish, then serve.
Notes
Store the leftovers in the refrigerator for three to five days in an airtight container. If you’d rather not to reheat your leftovers, you can really eat them cold!
