  • 2 medium zucchini squash sliced into 1/4-inch strips
  • 2 patty pan squash sliced into 1/4-inch rounds
  • 2 portobello mushrooms
  • 6 large gluten-free flour tortillas
  • 2 to 3 cups mozzarella cheese grated


  • Turn the grill up to a medium-high temperature. All of the vegetables should be brushed with olive oil and then seasoned with salt from the sea.


  • Immediately cover the vegetables after placing them on the hot grill. To achieve a charred and tender texture, cook for five to eight minutes, then flip and continue grilling for another five to eight minutes.
