INGREDIENTS

  • For the Skewered Chicken: 12 small skewers
  • 2 pounds boneless skinless chicken thighs
  • 1/2 cup soy sauce
  • 1/4 cup rice vinegar
  • 1/4 cup water
  • 1/3 cup Mirin
  • 2 tablespoons finely minced chives
  • 1 tbsp finely grated ginger
  • 1/4 cup brown sugar
  • 1 tablespoon toasted sesame seed oil
  • For the Miso Ranch: 3/4 cup mayonnaise
  • 1/3 cup buttermilk
  • 1/4 cup sour cream
  • 1 tbsp miso paste, or to taste
  • 2 tbsp minced chives
  • 1 tsp minced garlic
  • 1 tsp finely minced lemon zest
  • 2 tsp dried tarragon
  • 2 tsp dried dill
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste

INSTRUCTIONS

To soak, submerge the skewers in water.

Cut each chicken thigh without bones into three or so equal pieces. Transfer them into a big bowl.

 

Incorporate soy sauce, rice vinegar, water, mirin, grated ginger, minced chives, brown sugar, and toasted sesame seed oil into the bowl.

Make sure the chicken pieces are thoroughly covered by using your hands to combine the chicken and the teriyaki seasonings.
