Ingredients:

  • 8 ounces of gluten-free pasta (such as chickpea or brown rice pasta)
  • 1 can (15 ounces) of chickpeas, drained and rinsed
  • 1 cup of cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup of Kalamata olives, pitted and sliced
  • 1/4 cup of fresh parsley, chopped
  • 1/4 cup of fresh dill, chopped
  • 1/3 cup of crumbled feta cheese (optional)

For the Dressing:

  • 1/4 cup of extra virgin olive oil
  • 2 tablespoons of red wine vinegar
  • 1 clove of garlic, minced
  • 1 teaspoon of dried oregano
  • Salt and black pepper to taste

Instructions:

In accordance with the directions on the package, cook the gluten-free pasta until it reaches the al dente stage. The cooking process should be stopped by draining and rinsing the food under cold water. Put aside for later.
