This dish is great for a quick dinner during the week.

Ingredients

  • 1 ½ lbs. boneless, skinless chicken breasts, cubed in ½-inch pieces
  • 2 teaspoons paprika
  • 1 teaspoon poultry seasoning
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice

Instruction

In a small bowl, mix together red pepper flakes, poultry seasoning, salt, and pepper. To get the seasoning on all sides of the cubed chicken, sprinkle it with it and toss it around.

In a big sauté pan, heat the olive oil over medium-high heat. After you add the chicken, cook for 5 to 6 minutes.

Turn the chicken pieces over and stir them around. Cook for three to four more minutes, or until they are fully cooked.

Serve the chicken with fresh lemon juice squeezed over it.

Notes

Chicken: We’re using chicken breasts that don’t have any bones or skin on them. If you’d rather, you could use boneless, skinless chicken thighs instead.

Paprika: For this dish, I like to use regular paprika. If you want, you could also use half regular paprika and half smoked paprika.

This is a mix of herbs that you can find in the spice section of the grocery store. It gives the chicken a lot of flavor. No need to use olive oil. You can use canola oil or avocado oil instead if you’d like.

To finish, squeeze some lemon juice on top. It really makes the dish taste better and brighter. I think you shouldn’t skip it.

Ideas for serving: Put it on top of steamed rice and pour any extra sauce over the top. This dish can also be served with orzo, couscous, or baked or roasted potatoes. Just add a small salad or your favorite steamed vegetable, and dinner is ready.

Leftovers: Once cooled, leftovers can be kept in the fridge for up to 5 days in a container with a lid. You can heat it up again in the microwave or a skillet over medium-low heat. The sauce and small pieces of chicken help them heat up quickly and not get too dry.
