Fregola Porridge With Caramelized Apples Recipe
Ingredients :
Pasta porridge
- 7 oz fregola pasta
- 1 teaspoon salt
- 4 cups whole milk
- 3 tablespoons honey
Caramelized apples
- 6 tablespoons unsalted butter
- 2 pounds apples peeled, cored, cut into small chunks
- 1/3 cup granulated sugar more to taste
- 1 teaspoon ground cinnamon
- 1/4 cup whipping cream
Instructions :
Bring a large pot of salted water to a boil. Add the pasta and cook for 10 minutes. Drain pasta and set aside.
In a wide skillet, bring milk to a boil over medium-high heat. Reduce heat to medium-low and add the pasta. Cook for about 30 minutes, until the milk reduces a bit and the pasta becomes very soft and creamy.
Set aside, add the honey and stir until incorporated. Let cool to room temperature.
As the porridge is cooking, you can start making caramelized apples.
Melt butter in a medium saucepan set over medium heat. Add the apples and cook for about 10 minutes, stirring occasionally, until the apples are tender and brown.
Add sugar and stir until it melts, keep cooking for about a minute, then add the cinnamon. Stir until incorporated.
Pour in the cream and simmer until the sauce thickens, about a minute.
Serve pasta porridge in shallow bowl, with spoonful’s of caramelized apples on top.
Notes :
Fregola is a sort of pasta that is made in Italy and is comparable in size to couscous that is made in Israel. You can substitute couscous for fregola if you are unable to locate the former.
It is possible to prepare caramelized apples three hours in advance.
Maintain a cover over them and allow them to remain at room temperature. Immediately prior to serving, reheat (over a medium heat).
