Instructions:

  • Put the warm milk and the active dry yeast into a small bowl and mix them together. Hold it for approximately five minutes until it becomes foamy.
  • The sugar, melted butter, eggs, and vanilla extract should be mixed together in a large mixing bowl or in the bowl of a stand mixer that has a dough hook attachment attached to it. After thoroughly combining, mix.

  • To the bowl, add the yeast mixture, and stir it until it is completely incorporated.
  • The flour, cinnamon, nutmeg, and salt should be mixed together in a separate bowl using a whisk. While continuing to mix, gradually incorporate the dry ingredients into the wet ingredients until a dough is formed.

  • Work the dough by kneading it for approximately five to seven minutes, until it becomes smooth and elastic. You can add a little bit more flour, one tablespoon at a time, if the dough is more sticky than you would like it to be.
  • The dough should be placed in a bowl that has been greased, covered with a clean kitchen towel or plastic wrap, and allowed to rise in a warm place for approximately one hour, or until it has doubled in size.

  • Preparing the filling involves combining the butter that has been softened, brown sugar, and ground cinnamon in a bowl. This should be done while the dough is rising. The mixture should be smooth and creamy.
  • After the dough has doubled in size, punch it down and roll it out into a large rectangle that is approximately 18 inches by 12 inches on a surface that has been lightly dusted with flour.

  • A small border should be left around the edges of the dough, and the filling should be spread evenly over the dough. To ensure an even distribution, sprinkle the grated carrots and chopped nuts over the filling.
  • Form the dough into a log by beginning with one of the long sides and rolling it up tightly. To seal the seam, pinch it shut.

  • You can use a sharp knife or dental floss to cut the log into twelve rolls of exactly the same size. Set the rolls in a baking dish that is 9 inches by 13 inches and has been greased. Make sure to leave some space between each roll.
  • For an additional thirty to forty-five minutes, or until the rolls have reached the desired level of puffiness, cover the baking dish with a clean kitchen towel or plastic wrap.

  • Preheat the oven to 175 degrees Celsius (350 degrees Fahrenheit). The rolls should be baked in an oven that has been preheated for twenty-five to thirty minutes, or until they are golden brown and cooked all the way through.
  • Prepare the cream cheese frosting while the rolls are in the oven doing their thing. Cream cheese that has been softened, butter that has also been softened, powdered sugar, and vanilla extract should be mixed together in a medium bowl and beaten until smooth and creamy.

  • The rolls should be removed from the oven once they have finished baking and allowed to cool down for a short while. Using a spreader, evenly distribute the cream cheese frosting over the warm rolls.
  • The cinnamon rolls with the fluffy carrot cake should be served warm, and you should savour every delicious bite.
