Asian cuisine is my favorite cuisine, and I have a ton of recipes for everything from chicken chow mein to broccoli beef on my website. The most recent recipe to be added to the collection is this firecracker chicken. It’s quite tasty, spicy, sweet, and crunchy! Instead of being deep-fried, this chicken is crisply browned, then coated with sauce and baked to perfection.

INGREDIENTS

  • 1 1/4 pounds boneless skinless chicken breasts cut into 1 inch pieces
  • salt and pepper to taste
  • 1/3 cup cornstarch
  • 2 eggs beaten
  • 3 tablespoons vegetable oil
  • 1/3 cup buffalo hot sauce
  • 1/2 cup brown sugar
  • 1 tablespoon rice vinegar
  • 1/4 teaspoon red pepper flakes or more to taste
  • 1/4 cup sliced green onions
  • cooking spray

INSTRUCTIONS

Set the oven’s temperature to 350°F. Apply cooking spray to a 9″ by 13″ pan.

After arranging the chicken pieces on a platter, season them to taste with salt and pepper. Toss the chicken to ensure consistent coating after sprinkling it with cornstarch.

Every chicken piece should be dipped in the beaten eggs.
In a big pan, heat the oil over high heat. When the chicken is golden brown, fry it in a single layer for three to four minutes on each side.

Work may need to be done in batches.

Arrange the chicken pieces in the 9″ x 13″ pan in a single layer.

Combine the red pepper flakes, brown sugar, rice vinegar, and buffalo sauce in a small bowl.

Cover the chicken with the sauce. Bake the chicken for 35 minutes, stirring halfway through to coat it with sauce. Add some green onions on top and serve.

TIPS FOR ACHIEVING CRISPY FIRECRACKER CHICKEN

In this dish, the chicken is coated in a mixture of egg and cornstarch, which creates a crust on the chicken while it cooks. Turn increase the heat to a high temperature in your pan to achieve the greatest results for a browned and really crispy crust! Making ensuring the chicken isn’t packed into the pan is the next trick. The chicken pieces will steam rather than brown if they are placed too close to one another. The chicken may need to be browned in batches, but the effort is well worth it.

Once the chicken pieces have turned golden brown, the entire mixture is covered with the sauce and baked. As the sauce bakes, the cornstarch in the chicken coating will aid in its thickening. This recipe is spicy, so be careful if you can’t handle heat! Red pepper flakes are optional if you want to tone down the intensity. This firecracker chicken tastes great over rice, but it’s also good over chow mein or Asian rice noodles.
