Epic Beef Nacho Supreme Recipe : Make these incredible beef nachos the night before your next big game. The flavor combination of seasoned ground beef, cheese, refried beans, tomatoes, and green onions is simply amazing.
Are you prepared for this weekend’s Super Bowl Sunday? In case not, you now do.
My teenage years and our regular visits to Taco Bell served as the inspiration for these nachos. I ordered beef nachos supreme again.
That is elevated to a whole new level in this dish. Much improved taste and quality, while maintaining the same comforting flavor combination.
Epic Beef Nacho Supreme Recipe
Ingredients
- Taco Seasoning (or you can use one packet/ serving of store-bought taco seasoning)
- 1 pound ground beef
- 1/2 yellow onion diced
- 2 bags tortilla chips (16 ounces each)
- 1 can refried beans
- 16 ounces shredded cheese of choice (I used cheddar and Monterey jack)
- 3 roma tomatoes diced
- 2 to 3 green onions sliced
Instructions
Set oven temperature to 400 degrees.
In the meantime, sauté the ground beef and chopped onions on medium-high heat for about 8 minutes, or until fully cooked, then drain.
After adding the taco spice, put the steak back in the pan.
After adding 3/4 cup of water, stir, raise the heat to a simmer, and cook for about 5 minutes, or until the liquid has mostly evaporated.
As the beef cooks, spread a thick layer of chips onto two parchment paper-lined baking pans.
Place half of the refried beans onto each pan. Even though they are thick, I merely cover the chips with spoon fuls of these. (The spoon fuls will expand as the oven heats up.)
Evenly divide the ground beef between each chip pan.
Sprinkle shredded cheese on top.
Bake for fifteen minutes at 400 degrees.
Take out of the oven and top with chopped green onions and tomatoes.
Serve right away.
Recipe Notes
Ensure that the tortilla chips you use are robust and thick. NOT the skinny ones. I suggest the Kirkland organic tortilla chips from Costco, or a comparable product.
Having fun was my goal when creating this dish. I believe half of the recipe would be plenty if you were making this for a smaller crown (four to six). To adjust any measures, simply change the number of servings on the recipe card.

You guys have sturdy chips?
Start with a high-quality, robust tortilla chip. Not the crunchy, thin ones at all.♀️
Something that can manage the incredible toppings is what you desire. The organic tortilla chips from the Costco Kirkland brand are good. That’s what this image depicts. Any brand will do; just be sure to purchase the robust ones.
I spread a thick layer of the chips onto a baking sheet that I had prepared with parchment paper. After that, I begin adding layers of ingredients.
Refried Beans
I added canned refried beans with a spoon. Even though they are thick, I just create small, uniformly distributed mounds. As they warm up, they will disperse.
Alternatively, as a perceptive commenter pointed out, you might warm them up a bit first (in the microwave, Sturdy chips, y’all
You want to start with a good, sturdy tortilla chip. None of the thin and crispy ones.♀️
You want something that can easily handle the epic toppings. I like the Costco Kirkland brand organic tortilla chips. That is what is pictured here. You can use any brand, but just aim to get the sturdy ones.
I lined a baking sheet with parchment paper and put a generous layer of the chips on it. Then I start to layer on my ingredients.
Refried beans
I spooned on canned refried beans. They are thick, but I just make little evenly-dispersed piles. They will spread as they heat up.
Or, as one commenter smartly suggested, you could heat them a little first (in the microwave, in a glass container) to help them spread.
Seasoning the ground beef
About the ground beef: I like to use the best I can find. We are really loving Butcher Box right now! (I am an affiliate, but I purchase a box every month). The beef is grass fed, grass finished, and tastes fantastic!
