Easy Strawberry and Mandarin Salad Recipe

This recipe is ideal for a weeknight meal or a get-together because it is composed of nutritious greens that are tossed with sweet strawberries, watermelon, and mandarins, paired with savoury red onion and creamy feta cheese, and topped with a vinaigrette that is tangy and made with Dijon mustard.

 

Ingredients

Salad

  • 10 ounces leafy greens washed and drained
  • 1.5 pounds seedless watermelon cut into bite-size pieces
  • 10 mandarin oranges peeled and segmented
  • 8 ounces strawberries
  • 1 small red onion peeled and thinly sliced
  • 1 cup feta cheese crumbled
  • 3 tablespoons sunflower seeds

Dijon Mustard Dressing

  • 3 tablespoons olive oil
  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey or maple syrup
  • Salt and pepper to taste

 

Instructions

The ingredients for the dressing should be combined and then shaken or whizzed in a blender until smooth. If you are using a blender, add the olive oil at the very end and allow it to emulsify. The dressing will be more watery if it is shaken in the jar.

Arrange the lettuce mix that has been rinsed and dried in a large bowl or on plates that are suitable for individual servings.
