Easy Steak Tacos Recipe

Ingredients

  • 1 ½ pounds flank steak or sirloin, or ribeye *see notes
  • 8 small corn tortillas or flour tortillas, warmed
  • toppings as desired

Marinade

  • ¼ cup fresh lime juice about 2 limes, juiced
  • ¼ cup fresh orange juice about 1 orange, juiced
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • ¼ cup cilantro packed
  • 1 teaspoon cumin
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

Blend or process all of the marinade ingredients in a food processor. Blend until homogenous.

In a glass bowl or freezer bag, combine the marinade and flank steak; toss to coat.

Marinate for one hour or overnight, minimum. If you’re using ribeye or sirloin, marinade for no more than an hour. Take the steak out of the marinade and let the extra juice run out.

Set the temperature of the grill or grill pan to medium-high (425°F). Cook for 4–5 minutes on each side, or between 125 and 130°F for medium-rare. Warm the tortillas on the grill for approximately a minute on each side while the steak cooks.

After transferring the steak to a platter, give it at least five minutes to rest. Slice the steak against the grain into ½-inch pieces, and then cut each slice into little pieces.

Top with chosen toppings (pico de gallo, guacamole, sour cream, cilantro) and serve over warm tortillas.

Notes

Flan steak can be substituted with ribeye, sirloin, or skirt steak. Shorten the marinating period to one hour if you’re using ribeye or sirloin.

Marinate: To enhance the flavour of the steak, marinate it. A harder cut, flank steak has to marinade for a minimum of one hour and a maximum of twelve hours.

Rest After Cooking: To preserve the juices, let the steak sit quietly for a few minutes after cooking.

Slice Against the Grain (crucial!): If the steak is cut against the grain, it will be tough. The meat will have long fibres that are chopped across rather than along with it before it is marinated.

TIPS

Marinade for Steak Tacos

Beef cuts marinated in sauces, such as skirt or flank steak, become more soft and flavorful.

I make a basic marinade by adding some fresh cilantro for freshness, along with fresh orange and lime juice for acidity.

Juice: The acidity of the fresh lime and orange juice tenderises the beef while adding flavour.

Oil: Oil helps evenly distribute the flavourings and adds moisture.

Flavour: Garlic and cilantro enhance the flavour of the steak, which is seasoned with salt, pepper, and cumin.

You are welcome to add ingredients such as red pepper flakes, chilli powder, onion powder, oregano, or smoky paprika.
