Ingredients

  • ½ cup 120ml 35% whipping cream
  • 3 tablespoon 45ml water
  • 1 cup 200g granulated sugar
  • squeeze of lemon juice optional
  • 1 teaspoon 5ml light corn syrup or honey
  • 3 tablespoon 42g unsalted butter
  • ½ teaspoon pure vanilla extract
  • ½ teaspoon salt

Instructions

Lay out your ingredients before starting. You don’t need them to be room temperature, but letting them sit out for a few minutes is ok. Use a nonstick medium pot to add sugar.

Heat sugar on medium, stirring slowly. After a few minutes, the sugar will break down. Sugar melts into a coppery-caramely liquid after a few minutes.Make sure all sugar pieces are gone!

 

Caramel sauce won’t work without fully liquified sugar. Soon after the sugar melts, add the butter and lower the heat. Continuously whisk or mix butter until melted.

The butter and caramel may split, but don’t worry. Try to mix it in, then continue. Whisk in heavy cream slowly after removing pan from heat. Here, caramel bubbles.

 

To thicken, return the pot to the heat for a minute, stirring frequently. Add a pinch of flaky sea salt to taste after removal from heat. Let cool 10-15 minutes before using.

Generally speaking, it is not advisable to double a recipe when it comes to manufacturing candy. This is because the recipe yield is quite high.

Because I have never made a double batch of my salted caramel sauce, I would advise you to err on the side of caution and make a couple additional batches if you want to get more than one and a quarter cups of sauce out of it.
