Easy Peanut Butter Cake Mix Cookies Recipe
Ingredients
- 1 cup creamy peanut butter
- 2 large eggs
- 1/2 cup vegetable oil
- 15.25 ounce yellow cake mix
Things You’ll Need
- Baking sheets
- Silicone baking mat or parchment paper
- Hand mixer
-
Cookie scoop 1.5 – 2 tablespoon scoop
Instructions
Set oven temperature to 350°F. Use parchment paper or Silpat baking mats to line two large baking trays.
To a large bowl, add the oil, eggs, and peanut butter. Beat thoroughly with a handheld electric mixer until well blended. Beat in the cake mix until a thick cookie dough forms (see Notes below).
Roll roughly 2 teaspoons of dough per cookie into a ball for shaping. Place the dough balls on the baking sheets that have been prepared, allowing a few inches between them.
TIP: To make it easy to measure out roughly 2 tablespoons of dough for each cookie, I used a 1.5-tablespoon scoop that was somewhat heaping.
Using a fork, create a crosshatch design on the top of each cookie, pressing down gently on the cookies while doing so.
Bake for 12 to 15 minutes, turning the trays halfway through, or until the cookies are brown on the bottom and around the edges.
Before taking the cookies from the trays, let them cool fully.

FAQs AND QUESTIONs
Why is my cookie dough so crumbly?
The cookie dough is crumbly and thick. It may seem impossible to roll into balls, but I assure you that it rolls into perfectly round balls! Just be careful to thoroughly incorporate and crumble the dough with a handheld electric mixer.
How do you store cake mix cookies?
These peanut butter cake mix cookies can keep for five to six days at room temperature when kept in an airtight container.
Can I make the dough ahead of time?
It is possible to prepare the dough up to three days in advance. It can be refrigerated in an airtight container or carefully covered in plastic wrap.
Can I freeze the dough?
Yes, to freeze your cookie dough, roll them into balls and place on a parchment paper lined baking sheet. Flash freeze until the cookie dough balls are solid. Place them in a large Ziploc bag and store in the freezer for 1-2 months. Flash freezing the cookie balls will help them not stick together. To bake, remove from freezer and allow to thaw for 5-10 minutes or as the oven heats up. Follow the same baking instructions listed in the recipe card below.
