Easy Peanut Butter Cake Mix Cookies Recipe : The perfect amount of peanut butter flavor permeates these soft, chewy, and tempting peanut butter cake mix cookies. Even though we are huge fans of homemade peanut butter cookies, there are instances when taking a shortcut in the kitchen can result in a more enjoyable experience, particularly when you’re pressed for time. You can also make excellent use of that boxed cake mix you have sitting in your pantry by making these peanut butter cake mix cookies!

 

 

Easy Peanut Butter Cake Mix Cookies Recipe

 

Ingredients

  • 1 cup creamy peanut butter
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 15.25 ounce yellow cake mix

Things You’ll Need

  • Baking sheets
  • Silicone baking mat or parchment paper
  • Hand mixer
  • Cookie scoop 1.5 – 2 tablespoon scoop

 

 

Instructions

Set oven temperature to 350°F. Use parchment paper or Silpat baking mats to line two large baking trays.

To a large bowl, add the oil, eggs, and peanut butter. Beat thoroughly with a handheld electric mixer until well blended. Beat in the cake mix until a thick cookie dough forms (see Notes below).

Roll roughly 2 teaspoons of dough per cookie into a ball for shaping. Place the dough balls on the baking sheets that have been prepared, allowing a few inches between them.

TIP: To make it easy to measure out roughly 2 tablespoons of dough for each cookie, I used a 1.5-tablespoon scoop that was somewhat heaping.

Using a fork, create a crosshatch design on the top of each cookie, pressing down gently on the cookies while doing so.

Bake for 12 to 15 minutes, turning the trays halfway through, or until the cookies are brown on the bottom and around the edges.

Before taking the cookies from the trays, let them cool fully.
