Ingredients :

  • 1/2 cup (8 Tbsp; 113g) unsalted butter
  • 3/4 cup (75g) almond flour
  • 1/4 teaspoon salt
  • 1 Tablespoon (15ml) light or dark corn syrup or milk*
  • 1 teaspoon pure vanilla extract
  • optional: 1/2 cup Nutella or melted chocolate (see note)

Instructions :

  • Melt the butter in a saucepan of medium size over a low heat. Brown sugar, almond flour, salt, and milk or corn syrup should be added after the butter has melted.
  • The sugar should be dissolved and the ingredients should be completely blended after approximately three to four minutes of cooking and whisking.
  • In the event that the melted butter begins to separate from the mixture, take the pan from the heat and vigorously whisk the ingredients together until they are once again incorporated. Sooner or later, it will be put back together again.)

  • After taking the pan from the heat, mix in the vanilla essence. The mixture will have a gritty and glossy appearance.
  • While the oven is heating up, let the cookie dough rest out for approximately five to ten minutes so that it can thicken. There will be a thickening of the mixture as it cools down.
  • Preheat the oven to 350 degrees Fahrenheit (177 degrees Celsius). Using parchment paper or silicone baking mats, line two to three large baking sheets with the ingredients.
  • On baking sheets that have been prepared, place scant teaspoonfuls of the mixture three inches apart. Each cookie should contain a scant teaspoon of the mixture at most.

  • Bake for six to eight minutes, or until the edges take on a golden brown colour. The edges and the centres of the biscuits will burst into bubbles and sizzle as they bake!
  • After allowing the cookies to cool for a full five minutes on the baking sheets, move them to a rack to finish cooling entirely. Cookie dough dries out and becomes crisp as it cools.
  • After the cookies or sandwiches have cooled, you can eat them with Nutella or melted chocolate. In order to make a sandwich, spread either Nutella or melted chocolate onto the bottom of one cookie that has been allowed to cool, and then sandwich over another cookie. If you are using chocolate, please refer to the recipe note.

  • For one week, cookies that do not include any Nutella or chocolate filling will remain fresh when covered and stored at room temperature.
  • Cookies containing Nutella or chocolate will maintain their freshness for three days if they are covered and stored at room temperature. Alternatively, they can be stored in the refrigerated for one week.

  • In the baking section of most large grocery stores, you can find Bob’s Red Mill brand almond flour, which is the kind of almond flour that I prefer to use.

  • The easiest way to manufacture your own almond flour is to simply pulse almonds until they achieve a texture that is similar to that of flour. If you are unable to obtain almond flour in the shop, you can make your own.
  • On the other hand, you might use the same quantity of oat flour in place of almond flour. Buy oat flour or grind entire oats into a flour using a food processor. It is not a good idea to use all-purpose flour since it will prevent the cookies from spreading or caramelising .

  • The taste and texture of coconut flour are not to everyone’s liking, according to several readers who have tried it. Almond flour comes highly recommended from me.
  • In this recipe for lace cookies, you can use either one tablespoon of milk or one tablespoon of corn syrup. You are going to require a liquid, and the cookie that you end up with will taste precisely the same regardless of
  • which one you choose. Corn syrup is my preferred choice because I believe that it gives the cookies a little crispier texture while baking.
  • There is a possibility that Nutella could become a little messy, so if you are going to be giving the lace cookies as gifts or travelling with them, I recommend using melted chocolate to sandwich the biscuits. Unlike Nutella, chocolate that has been melted will dry out.

  • Consider drowning the cookies in melted chocolate or sprinkling the chocolate on top of the cookies as an alternative to sandwiching them. You should need approximately 6-8 ounces of chopped semi-sweet chocolate, regardless of the method you use.
  • Both Ghirardelli and Bakers brands, which may be found in the bakery department, are a favourite of mine. By melting the chopped chocolate in increments of fifteen seconds, either in a double boiler or in the microwave, you should stop and stir after each increment until the chocolate is perfectly smooth.
  • After the cookies have cooled, sandwich, dip, or drizzle them. The chocolate should be allowed to sit at room temperature for half an hour or in the refrigerator for twenty minutes before it is entirely set.
