Easy Fettuccine Alfredo Recipe – Learn under Experts
Ingredients
- 1 lb fettuccine noodles
- ¼ cup butter
- 1 Tablespoon all-purpose flour
- 2 garlic cloves , minced
- 1 cup heavy cream
- 1 cup milk
- 2 cups freshly shredded parmesan cheese see note*
- ½ teaspoon Italian seasoning
- Salt and pepper , to taste
- 1 Tablespoon fresh chopped parsley , optional
Instructions
After shredding the cheese, let it aside to come to room temperature.
Put the fettuccine noodles in a big pot of boiling, salted water. As directed on the packaging, cook until the food is tender.
Meanwhile, heat a large skillet over medium heat to melt butter. Stir for 30 seconds after adding flour. For 30 seconds, add the garlic and saute it. After adding the milk and cream gradually, boil the mixture.
Take off the heat and gradually add the cheese, stirring until it’s smooth, a few handfuls at a time. To taste, add freshly cracked salt and pepper and season with Italian seasoning.
Toss cooked noodles with tongs or a noodle ladle into the alfredo sauce after removing them from the hot pasta water (save pasta water).
Mix thoroughly to blend.
Toss the noodles in the sauce to rehydrate if needed, then dilute the sauce before serving (you’ll notice the sauce will thicken as it cools) by adding hot pasta water (I generally add at least ¼ cup).
Add some extra fresh parsley on top, if desired, and garnish with fresh parsley.

Notes
Use only fresh cheese shreds.
Add some protein to your dish. Try making Shrimp Fettuccine Alfredo or adding some fresh grilled chicken to Chicken Fettuccine Alfredo.
Add Vegetables: Stir in roasted asparagus or steamed broccoli.

Preparation Guidelines: Although fresh sauce is ideal, you can prepare it up to a day ahead of time if you’d like. Stir it regularly while reheating it on a low heat in the stove. Thin it with a little cream or milk if necessary.
Instructions for Freezing: Although the sauce tastes best immediately after preparation, you can freeze Alfredo sauce. However, due of the cream, the texture may not reheat as smoothly. The sauce should be thoroughly thawed in the refrigerator before being gradually warmed over low heat while stirring constantly.
