Ingredients

  • 1 head cauliflower (cut into bite-sized pieces)
  • 1 cup all-purpose flour
  • ½ cup cornstarch
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup water
  • 1 tablespoon hot sauce (such as Frank’s)
  • 2 cups breadcrumbs (Italian seasoned )
  • oil (for frying)

 

Instructions 

 

Get your deep fryer to 185°F (365°F). Add the cauliflower pieces one at a time and fry them until they are golden and crispy. To get rid of any extra oil, drain them on paper towels. You can salt them if you want to, but you don’t have to.

 

Notes

If you don’t have a deep fryer, don’t worry. You can still make this meal in a heavy-bottomed pot or a deep skillet. Just put in enough oil to cover the cauliflower pieces, and use a kitchen thermometer to keep an eye on how hot the oil is.

 

The key is the oil temperature: To get the perfect crispy texture, it’s important to keep the oil at the right temperature (365°F/185°C). If the oil is too cool, the cauliflower will soak up too much of it and get greasy. If the oil is too hot, the outside will burn before it’s fully cooked.

 

Season to Taste: You can change how spicy the batter is or add more to the breadcrumbs to make them taste better. Adding some chopped Parmesan, garlic powder, or smoked paprika can really make the food taste better.
