I completed it at last! I decorated my Christmas tree at last. It’s quite beautiful! Though I will, I neglected to snap a photo of it for this post. It may seem early to some of you, but not to me. I had intended to complete mine over the weekend, but I was unable to.

Easy Crockpot Country Sausage and Bean Soup Recipe 

As I mentioned earlier in the month, I will also be sharing a few more crockpot recipes with you. This one, for country sausage and bean soup, is really delicious. I can’t even begin to express how much I adore my slow cooker—it’s that simple. It’s so simple that I managed to make it yesterday while baking all those cookies. Now, the reason my version turned out so spicy is that I unintentionally added a lot of Sriracha sauce to it. If you don’t mind a little heat, follow my instructions and use just a teaspoon of the sauce. Not to mention the sausage, the flavours in this soup are very strong. The black beans are really delicious. Because I like to bite into things, I left my banger a little chunkier. This soup is sure to please. I should have mentioned in the recipe that I prefer to top my soup with sour cream or shredded cheddar cheese; it tastes so much better that way.

Ingredients

  • 3½ cups chicken broth (low sodium)
  • ½ cup hot water
  • 1 cup black beans (dried, rinsed)
  • 1 cup yellow onion (chopped )
  • 2 bay leaves
  • 1 tablespoon sugar
  • salt and pepper ( to taste)
  • ¼ teaspoon ground red pepper
  • 4 links country pork sausage (reduced-fat)
  • 2 cups diced tomatoes
  • 1 tablespoon chili powder
  • 1 tablespoon Worcestershire sauce
  • 1½ teaspoon ground cumin
  • 1 teaspoon Sriracha sauce
  • 2 leaves basil (chopped, for garnish)

 

 

Instructions

Put the beans, water, bay leaves, sugar, ground red pepper, salt, and pepper in a crockpot along with the broth. Cook with a lid on for four hours on high or eight hours on low heat.

Bring a skillet to a simmer over medium-high heat. If needed, sprinkle cooking spray on the skillet. After removing the casings, cook the sausage, tossing and chopping it up into large pieces, until it starts to brown.

 

Add the sausage and all the other ingredients—except the cilantro and basil—to the bean mixture in the slow cooker. After 15 minutes, cook on high with a cover on.

Add basil or cilantro as a garnish.
