Easy Buffalo Chicken Salad Recipe

Ingredients:
For the Chicken:
- 2 boneless, skinless chicken breasts
- 1/4 cup Frank’s RedHot Buffalo Sauce (or your favorite hot sauce)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
For the Salad:
- 4 cups mixed greens (romaine, spinach, arugula, etc.)
- 1 cup cherry tomatoes, halved
- 1/2 cup celery, sliced
- 1/2 cup shredded carrots
- 1/4 cup red onion, thinly sliced
- 1/4 cup blue cheese crumbles (optional)
For the Dressing:
- 1/4 cup Greek yogurt
- 2 tablespoons mayonnaise
- 2 tablespoons buttermilk
- 1 tablespoon white vinegar
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 2 tablespoons blue cheese crumbles (optional)
Instructions:
Preheat the oven to 375°F (190°C). Combine the garlic powder, onion powder, smoked paprika, salt, and pepper in a small basin. Coat the chicken breasts with the spice mixture after rubbing them with olive oil.
Place the chicken breasts on a baking sheet and bake for 20-25 minutes, or until the internal temperature reaches 165°F (75°C). After the poultry has been cooked, allow it to rest for five minutes before shredding it with two forks.
Mix the Buffalo sauce with the minced chicken until it is evenly distributed. Mix the mixed greens, cherry tomatoes, celery, shredded carrots, and red onion in a large salad bowl.
