Warm the oven up to 325℉ (165℃). In a large bowl, use a mixer to mix the butter and brown sugar together. Mix well after each cup of flour that you add, up to 3 3/4 cups.
Cover your work area with the rest of the flour. Once the dough comes together, knead it a few times. Then, use a rolling pin to make it about ¼ to ½ of an inch thick.
Either a 2-inch cookie cutter or a shortbread cooking cutter can be used to make the shapes you want in your cookies. Prick the cookies with a fork or toothpick to make little holes in them.
Then, put them on baking sheets that have not been greased. For 20 to 25 minutes, bake at 325℉ (165℉). Keep them from turning brown. Take it out of the oven.

Notes
You don’t have to cut the cookies into shapes; you can just pat the dough into a 17.88 x 12.88 x 1.06-inch baking sheet that hasn’t been greased. The parchment paper should hang over the sides to make it easy to take the cookies out.
When they are done, take them out of the oven and use the parchment paper to lift the cookies off the sheet. Then, cut them into any shape you want. You don’t need to add more salt to your cookies if you use salted butter.
It is really easy to freeze these cookies. Shortbread cookies can be frozen for up to three months if they are put in a container that won’t let air in.
