However, notice the deep hue of the sauce; this is entirely due to my most recent and best culinary addition fire-roasted tomatoes. These are fresh tomatoes, roasted over an open flame, and they have a deep, smokey flavor that is incredibly flavorful. I feel like I don’t cook with turkey nearly enough, but I really should because turkey breast is such a great food.

Ingredients

  • 3 tablespoons olive oil
  • 1 pound turkey breast (cut in long strips)
  • salt and pepper (to taste)
  • 5 cloves garlic (minced)
  • 8 leaves basil (chopped)
  • 15 ounce fire roasted tomatoes
  • ½ cup heavy cream (125 mL)

Instructions

In a big skillet, preheating the olive oil over medium-high heat is the first step. Salt and pepper should be applied to both sides of the turkey breast before cooking. Once the turkey pieces have been added to the skillet, fry them for approximately four minutes on each side, or until they have a golden brown color.

Once the turkey has been removed from the skillet, set it aside. Place the tomatoes that have been roasted over fire in a blender or food processor and pulse them a few times until they are completely smooth. Put aside for later.

The garlic and half of the chopped basil should be added to the skillet and let to fry for one minute, or until the garlic develops a fragrant quality.

In a skillet, add the tomatoes that have been roasted over fire and the heavy cream. Stir the mixture and taste it for seasoning; make any required adjustments.

Reintroduce the turkey to the pan and continue to cook for approximately ten minutes further.
Place the remaining basil leaves on top of the dish, and serve it over rice or pasta.
