Easiest Cheesy Beef Tortellini Enchilada Casserole Recipe
Ingredients
- 16 ounce cheese tortellini
- 1 pound ground beef (lean)
- 16 ounce enchilada sauce
- 2 cups mozzarella cheese (shredded)
Instructions
Turn the oven on to 350°F.
Follow the directions on the package to cook the tortellini. They usually take ten to twelve minutes to complete. Take the tortellini out of the boiling water and reserve.
In a skillet, cook the ground beef until it loses its pink color. Be cautious to drain any fat that may be present.
Toss the tortellini with the beef, enchilada sauce, and one cup of mozzarella cheese in an ovenproof casserole dish (9 by 13 inches is a good size). After adding the remaining mozzarella cheese on top, bake for 20 to 30 minutes, or until the cheese is bubbling and melted.
If desired, garnish with parsley and serve warm.
