It took me years to make my first blondie because I’ve always been so interested in the idea. I never got why people were so crazy about blondies. It’s not a cookie or a cake, but something in between.
What? Thus, when I finally tried one, I fully understood! In brownie form, they’re kind of like cookie bars. Kind of. The chocolate and sweetness in these Brown Butter Chocolate Chunk Blondies make my heart sing.
INGREDIENTS :
- 10 tablespoon (140g) unsalted butter see notes
- 1 cup (200g) brown sugar packed
- 1 egg + 1 egg yolk room temperature
- 2 teaspoon vanilla extract
- ½ teaspoon salt
- ¼ teaspoon espresso powder
- 1¼ cup (150g) all purpose flour
- 3.5 oz (100g) chocolate, chopped (chips works too) Use 60-70% dark chocolate (or semi-sweet chips)

INSTRUCTIONS :
For the Brown Butter
In a medium-sized saucepan over medium-low heat, melt the butter. To make sure the butter melts all the way, stir it. It will begin to foam up once the butter is fully melted. Keep stirring the butter.
It will start to turn a darker color as it cooks. It might take 6 to 8 minutes.
You’ll smell nuts, and the butter at the bottom of the pan will start to have brown spots on it. To brown butter from beginning to end, you shouldn’t need more than 10 minutes of medium-high heat
When the butter turns brown, put it in a heat-safe bowl and let it cool for five to ten minutes.

For the Blondies
Mix the batter: Put the cooled butter and sugar in a medium bowl and use a spoon to mix them together. Mix in the egg yolk, vanilla, and egg until everything is well mixed.
Toss the coffee powder and salt together. Then add the flour and mix it in until it’s all mixed in. Finally, add the candies and mix them in until they are well mixed.
