Ingredients

  • 1 cup unsalted butter (226g)
  • 1 cup granulated sugar (200g)
  • 1 egg

  • ¼ cup cocoa powder (25g)
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon kosher salt
  • 1 tablespoon hot brewed coffee (15mL)
  • 1 tablespoon liquid red food coloring (15mL)
  • ¾ cup chopped semisweet chocolate chips (130g)
  • 12 ounces cream cheese softened, (340g)
  • 1 cup powdered sugar sifted, (100g)
  • 2 tablespoon milk or heavy cream (30mL)
  • 1 cup white chocolate chips (150g)

 

Instructions :

The flour, cocoa, salt, baking soda, and baking powder should be sifted into a bowl, and then whisked together thoroughly before being put aside. Using either a hand mixer or a stand mixer, whip the butter and sugar together in a bowl for approximately two minutes. The egg and vanilla extract should be beaten in until they are mixed.

While continuing to beat on low speed, gradually add the flour mixture to the butter mixture until it is just incorporated. Make sure that the coffee and red food colouring are thoroughly mixed together. make sure not to overbeat. Add one cup of chopped chocolate and mix well.
Put dough in the refrigerator for half an hour.

Using a scoop that is one tablespoon in size, scoop out the dough, and then carefully roll it between your hands to form smooth balls. At a distance of approximately 2 inches, place dough balls on a baking sheet with a rim that has been lined with parchment paper. Bake at 350 degrees for ten to twelve minutes, or until the edges are crisp.

Wait ten minutes for the cookies to cool on the pan, then move them to a wire rack and allow them to cool completely.
Using either a hand mixer or a stand mixer, combine the powdered sugar and cream cheese and beat until smooth. If you so choose, you can beat in some milk or heavy cream.

 

Approximately one spoonful of filling should be spread onto the bottom surfaces of half of the cookies. Place the remaining cookies on top, with the bottoms facing down. Using a small bowl, microwave white chocolate in intervals of thirty seconds until it is completely smooth (about three times).

Put the melted white chocolate into a plastic bag that has a resealable closure. Remove the corner of the bag, and then sprinkle biscuits in the manner of your choosing. If you want the chocolate to harden, freeze the cookies for around fifteen minutes.
