Delicious Hawaiian Chicken Kabobs Recipe: Hawaiian Chicken Kebabs are very filling and made with bright pineapple, red onion, bell pepper, and marinating chicken that is full of flavor.

 

Delicious Hawaiian Chicken Kabobs Recipe

After taking up the flavors of the marinade, they are grilled just right for a light char to add that last bit of flavor.

 

Ingredients

Marinade:

  • 1/3 cup ketchup
  • 1/3 cup packed dark brown sugar
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup canned pineapple juice
  • 4 Tbsp olive oil , divided, plus more for brushing grill
  • 1 1/2 Tbsp rice vinegar
  • 4 garlic cloves , minced (4 tsp)
  • 1 Tbsp minced ginger
  • 1/2 tsp sesame oil
  • Salt and freshly ground black pepper
Kebabs:

  • 1 3/4 lb boneless, skinless chicken breast , chopped into 1 1/4-inch cubes
  • 3 cups (heaping) fresh cubed pineapple (about 3/4 of 3 lb pineapple)
  • 1 1/2 large green peppers , diced into 1 1/4-inch pieces
  • 1 large red onion , diced into 1 1/4-inch pieces

 

Instructions

There are 2 tablespoons of olive oil, garlic, ginger, soy sauce, pineapple juice, and 2 tablespoons of rice vinegar in a bowl.

Add the ketchup and mix them together with a whisk. You can add salt to taste and stir in 3/4 tsp of pepper.

Put chicken in a gallon-sized bag that can be closed again. Put away 1/2 cup of the marinade in the fridge, and then pour the rest of the sauce over the chicken.

Put the bag closed and put it in the fridge for an hour. In the meantime, soak 10 wooden skewer sticks in water for an hour.

 

Warm up the grill over medium-low heat to 200°F (400°C). Add the last 2 tablespoons of olive oil to the red onion, bell pepper, and pineapple, and toss to coat.

Add salt and pepper to the red onion and bell pepper. Next, put pineapple, chicken, red onion, and bell pepper on skewers until all the chicken is used up.

 

Put the skewers on the grill and then brush the grates with olive oil. After 5 minutes on the grill, brush the tops with the last 1/4 cup of sauce. Move to the other side and brush it with the last 1/4 cup of sauce.

For another four minutes, or until an instant read thermometer in the middle of the chicken reads 165°F (75°C), take it off the grill. Warm up and serve.

 

Notes

So they don’t burn while cooking, soak wooden skewers in cold water for at least an hour before you use them.

It’s best to use fresh pineapple instead of pineapple in a can. The taste isn’t nearly as good, and the cubes in the can aren’t very big. Cooking Classy has the recipe.
