Ingredients
- 1 pound large shrimp (shells removed)
- 1 tablespoon butter
- 2 tablespoon cajun seasoning (or to taste)
- juice from half a lemon
- 1 mango (peeled and chopped)
- 1 cup cherry tomatoes (chopped)
- juice from 1 lime
- 4 green onions (chopped)
- 1 jalapeno (seeded and chopped)
- ½ cup cilantro (chopped)
- salt and pepper to taste
- 8 6″ corn tortillas
- 1 cup coleslaw mix
Ingredients
For the preparation of the salsa, combine all of the ingredients for the mango salsa in a bowl and leave it aside until you are ready to assemble the tacos.
With the heat turned up to high, melt the butter in a big skillet. The shrimp should be seasoned with cajun seasoning before being added to the skillet.
It shouldn’t take more than a couple of minutes to cook until the meat turns pink. To prepare the shrimp, turn off the heat and squeeze half a lemon over them.
