Tea party favorites include cucumber sandwiches, which are light, fresh, and airy. They are little finger food made with thinly sliced cucumbers, a zesty herb spread, and soft, crust less bread.
Since afternoon tea was only provided to the rich in England in the 1800s, these sandwiches have been around. They were just buttered bread and cucumber. Then lovely Southern ladies in the US discovered them and added herbed cream cheese to these sandwiches. They are cheap, easy to make, easy to eat, light, and delicious, therefore they’re popular at many kinds of parties!
Ingredients
- 16 slices high-quality soft white sandwich bread (about 1 loaf), crusts removed
- 1Â English cucumber
- 8 ounces cream cheese , softened
- 1/4 cup mayonnaise
- 1 tablespoon minced fresh dill
- 1 tablespoon minced fresh chives
- 1 tablespoon lemon juice
- 1/4 teaspoon garlic powder
- 1/4 teaspoon kosher salt
- Cracked black pepper , to taste
Instructions
- To prepare the cucumber, peel it in stripes and then use a mandolin or a sharp knife to cut it into slices that are 1/8 inch thick. Spread the slices out on some paper towels, and then evenly sprinkle them with coarse salt. Rest for fifteen to thirty minutes in order to extract moisture. Clean paper towels should be used to pat dry.
- While you wait, you should prepare the spread. Cream cheese that has been softened, mayonnaise, dill, chives, lemon juice, garlic powder, and salt should be mixed together in medium bowl using a handheld mixer. These ingredients should be combined.
- On one side of each slice of bread, spread the cream cheese that has been flavored with herbs.
- Slices of cucumber should be layered on top of half of the bread slices. Depending on your preference, season with freshly cracked black pepper. Last but not least, cover the remaining bread slices with the cream cheese mixture. You should now have eight sandwiches that are completely stuffed.
- Use a chef’s knife that is sharp and cut each sandwich into quarters, making sure to push through the bread all the way down to the bottom. Your total number of tea sandwiches is 32.
- Enjoy the dish as soon as it is served!
