 Crock Pot Italian Meatball Soup Recipe -Simplest Recipe Ever :-A broth-based soup with small pasta and meatballs, Italian Wedding Soup is named after the Italian phrase “married soup” because the flavors blend together so beautifully. The soup is a combination of small pasta and meatballs.

Crock Pot Italian Meatball Soup Recipe -Simplest Recipe Ever

 

Ingredients :

  • 1 white onion diced
  • 2 carrots diced
  • 2 cloves garlic minced
  • teaspoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 12 ounces frozen meatballs
  • ¾ cup acini de pepe pasta dried (orzo would also work)
  • 8 cups chicken broth
  • 4 cups chopped baby spinach
  • shredded Parmesan cheese for topping

Instructions :

Everything but the pasta and spinach should be put into a big slow cooker.
Set the timer to low and cook for 6 to 7 hours or high for 3 to 4 hours.
The last 20 minutes are when you add the pasta.
Stir the spinach in until it’s soft.
Shred some Parmesan cheese on top and serve.

Notes :

Freezer Meal -It’s easy to turn this recipe into a frozen meal. Putting everything in a big freezer bag except the pasta and spinach will help you do this. You can put the spinach and pasta in two separate freezer bags and tape them to the outside of the soup bag.

Put it away. Let it thaw in the fridge overnight before you want to cook it. Follow the directions when cooking.I would add water before cooking and use chicken bouillon instead of stock.
Leftovers -Use a jar that doesn’t let air in to keep leftovers for 3–4 days. It may need more liquid because the pasta has soaked up all the stock. To make it more brothy, just add ¼ to 1/2 cup per bowl.

Yes! I know how to make beef meatballs at home that would work great in this recipe. If you want to make them easier to eat in this soup, I would make them smaller than the recipe says.

Can this soup be made ahead of time?

You can make this ahead of time, for sure. You could do this, but I think you should cook the pasta separately first. If you leave the pasta in the stock for too long, it will soak up the liquid. W’

 

What is Acini de Pepe pasta?

It’s a small pasta shape like a pearl. You can find it in most food stores, but if you can’t, you can use any other small pasta instead.
