These crispy, cheesy chicken ranch patties are made by combining mozzarella cheese, ranch dressing blend, and chopped boneless chicken breast. They are then pan-fried and served with a straightforward vinaigrette marinade.

Ingredients:
- 1 1/2 pounds skinless, boneless chicken breasts, cut into 1/2-inch pieces
- 2 large eggs
- 3 tablespoons grated onion
- 2 tablespoons finely chopped fresh parsley
- 1 1/2 cups shredded mozzarella cheese
- 1 (1 ounce) packet dry ranch dressing mix, divided
- 3/4 cup mayonnaise, divided
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1/3 cup all-purpose flour
- 3 tablespoons olive oil, plus more as needed for frying
- 1 tablespoon fresh lemon juice
- 1/8 teaspoon cayenne pepper
Instructions:
A large bowl should be used to combine the chicken, eggs, onion, parsley, mozzarella, and half of the ranch flavor packet mixture. Assemble the ingredients by stirring in a half cup of mayonnaise, salt, and pepper. Incorporate flour into the mixture and stir until it comes together.
Pre-heat the oven to 93 degrees Celsius (200 degrees Fahrenheit). While the oven is heating up, position a rack inside of a sheet pan and place it into the oven. In a large skillet that is nonstick, bring one and a half tablespoons of oil to a temperature of medium-high.
Using a measuring spoon, place approximately a quarter cup of the chicken mixture onto the skillet for each individual burger. Cook for approximately four minutes, without stirring, until the color changes to a golden brown. After three to four minutes, flip the food and continue cooking until it is golden brown and cooked all the way through.
A thermometer with an immediate read will read 165 degrees Fahrenheit (74 degrees Celsius) if it is inserted close to the middle. Repetition with the remaining chicken mixture and oil is required. If you want to keep the patties warm, place them in the oven on the pan that has been prepared.
The remaining ranch seasoning and mayonnaise should be mixed together in a small bowl. Mix in the cayenne pepper and lemon juice until everything is thoroughly mixed. Ranch sauce should be served alongside chicken patties.
