Ingredients:
For the Chicken:
- 2 boneless, skinless chicken breasts
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1 cup panko breadcrumbs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- Vegetable oil for frying
For the Buffalo Sauce:
- 1/2 cup hot sauce (such as Frank’s RedHot)
- 1/4 cup unsalted butter
- 1 tablespoon honey
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon garlic powder
For the Sandwich:
- 4 brioche buns
- 4 leaves of lettuce
- 4 slices of tomato
- 1/2 cup blue cheese dressing or ranch dressing
- Pickle slices (optional)
Instructions:
Start by dividing the chicken breasts horizontally to produce four narrow cutlets. Put the chicken cutlets in a basin filled with buttermilk, ensuring that they are completely submerged. For optimal outcomes, cover and refrigerate for a minimum of one hour (or overnight).
Combine the flour, panko breadcrumbs, garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne pepper in a shallow dish.
The chicken should be removed from the buttermilk, allowing any excess to drain off. Press each piece into the flour mixture to ensure it adheres. Arrange the chicken that has been coated on a plate.
In a large skillet, heat approximately 1 inch of vegetable oil over medium-high heat until it reaches 350°F (175°C). Fry the chicken in stages, cooking each side for approximately 3-4 minutes until it is golden brown and fully cooked.
Combine the chili sauce, butter, honey, Worcestershire sauce, and garlic powder in a small saucepan over medium heat. Stir the mixture until the butter has melted and the sauce has reached a smooth consistency. Eliminate from the humidity.
Add the buffalo sauce to the fried chicken cutlets and toss until they are thoroughly coated.
Lightly toast the brioche buns. Spread blue cheese dressing or ranch dressing on the lower bun.

Tips:
The chicken cutlets that have been breaded can be baked at a temperature of 400 degrees Fahrenheit (200 degrees Celsius) for twenty to twenty-five minutes, with the chicken cutlets being turned over halfway during the cooking process.
This will ensure that the chicken cutlets become crispy and evenly cooked throughout. To reach the level of spiciness that you desire, increase the amount of hot sauce and cayenne pepper to an appropriate level that suits your preferences.
Bread Options: If you are interested in trying something new in terms of flavor and texture, you may try replacing the brioche buns with sandwich rolls or whole wheat buns or any other type of bread.
When it comes to toppings, if you want to make your sandwich more unique, you can try experimenting with different toppings like coleslaw, avocado slices, or red onion rings.
