Creamy Chicken Mushroom Brown Rice Casserole Recipe – Learn like a pro- Full of chicken and mushrooms, this rice casserole is creamy, cheesy, and delicious. Everyone will enjoy this casserole as the ideal family supper.

 

Creamy Chicken Mushroom Brown Rice Casserole Recipe – Learn like a pro

 

Ingredients

  • 3 cups cooked rice
  • 1-2 Tbsp. vegetable oil for cooking
  • 5-6 chicken tenders
  • 8 oz. baby belle mushrooms
  • Salt
  • Fresh cracked black pepper
  • 1 tsp Garlic powder
  • 1 cup chicken stock1/2 cup heavy whipping cream
  • 2 tsp fresh thyme
  • 1 Tbsp. corn starch
  • 2 cups shredded Italian cheese mix

 

Instructions

  1. Chop the mushrooms and reserve them until you’re ready to cook them.
  2. Grease a 9×9 casserole dish and preheat the oven to 350 degrees.
  3. Heat a frying pan to a medium temperature. Heat it up and add some oil.
  4. Add some garlic powder, salt, and pepper to the chicken tenders and cook until they are just done. Remove and set away the tenders.
  5. In the same pan where you fried the chicken, add the mushrooms. Add a little salt, pepper, and garlic powder, then thoroughly combine. Add the mushrooms and sauté until just done. Remove the mushrooms from the skillet.
  6. Add the chopped cooked chicken tenders to a mixing bowl. Include the mushrooms and cooked rice in the bowl. Stir in 1 cup of the shredded Italian cheese mixture. Heat the heavy whipping cream and chicken stock in the same pan that you used to cook the chicken and mushrooms.
  7. Stir corn starch into a small amount of chicken stock until well blended. Stir the corn starch mixture into the heavy cream/stock mixture just until combined.
  8. Add thyme, pepper, and salt and stir. Once simmering, remove from heat.
  9. In the bowl, combine the rice mixture with the sauce. Transfer to the prepared casserole dish after giving it a good stir
  10. Evenly distribute the casserole mixture, then sprinkle the remaining cheese on top.
    Bake for eighteen to twenty minutes.

I’m not just referring to children—we all know that children can be quite finicky eaters—I’m also referring to our elderly relatives. For the past fifteen years, my husband has presented a gastronomic challenge to me. Although he has made significant progress from the extremely picky guy I first met, he is still far from being an experimental foodie.

Even while I doubt he will ever have the same level of experimental eating as myself, I am still rather proud of how far he has come. My husband ate so little when we first started dating that I could count them on two hands. I still clearly recall him rejecting most vegetables as well as basic items like broccoli, mushrooms, and tomatoes.

 

His first reaction the first time I made him my Chicken Stroganoff was to point out the mushrooms without touching them. However, he tried them since he didn’t want to offend me because we had just started dating. That was the first dish that began to broaden his perspective on foods and ingredients he had previously assumed to be disliked. He devoured every morsel and began to genuinely trust me when it came to food.

I’ve “cured” him of most of his culinary anxieties over the years, with the exception of shellfish. I simply cannot persuade him to even eat anything that comes from or has been in the vicinity of seafood.

 

Because it has so many mushrooms, my husband used to refuse to touch this mushroom chicken and rice casserole years ago. But now he ate every last morsel of it, including the additional mushrooms I had on top. Actually, this easy, creamy rice dish was a hit with everybody. This simple, comforting dish will definitely satisfy even picky eaters. (A few finicky individuals might even have their opinions changed by it.)
