Instructions

Warm the oven up to 175°F (350°F). Paper or silicone baking mats should be used to line baking sheets.

Mix the flour, baking powder, baking soda, and salt in a medium-sized bowl with a whisk. Put away.

Put the softened butter and granulated sugar in a large bowl. Use a hand mixer or stand mixer to mix the ingredients together until the mixture is light and fluffy.

Mix the egg and vanilla extract into the butter and sugar until everything is well mixed together. Mix the dry ingredients into the wet ingredients one at a time until a smooth dough forms.

Add the chopped dried cranberries slowly and mix them in until they are spread out evenly in the dough.

Using a cookie scoop or spoon, make round balls out of the dough and place them on the baking sheets that have been prepared, leaving space between each cookie so that they can spread.

After the oven is hot, bake the cookies for 10 to 12 minutes, or until the edges are just beginning to turn golden.

After taking the cookies out of the oven, let them cool for 5 minutes on the baking sheets before moving them to a wire rack to cool all the way down.

Mix the powdered sugar, milk or cream, and vanilla extract in a small bowl with a whisk until the mixture is smooth and creamy. If you need to, add more milk or powdered sugar to change the consistency.

Once the cookies are completely cool, use a knife or an offset spatula to spread a thick layer of frosting over the top of each one.

For a holiday touch, sprinkle finely chopped dried cranberries on top of the frosted cookies.
Let the frosting harden on the cookies before you serve them or put them away in a container that won’t let air in.

Tips for Success

Don’t bake cookies for too long if you want them soft and chewy. When you take them out of the oven, the edges should be just set.

For a citrusy twist, you can add a teaspoon of orange zest to the cookie dough or frosting to make it taste better.

Instead of using frosting, you can melt white chocolate chips and drizzle them over the cookies for a smoother frosting.

You can keep these cookies at room temperature for up to three to four days in a container that doesn’t let air in.

You can also freeze the cookies without the frosting to keep them fresh longer. When you’re ready to serve them, frost them.

Notes

As you like, you can change these cookies by adding chocolate chips, nuts, or other dried fruits to the dough to make it more interesting and sweet.

Don’t skip the step of chilling the cookie dough if you want the cookies to stay soft while they’re baking and not spread out too much.

These cookies are great to give as gifts at Christmas or on other nice days. For a thoughtful homemade treat, put them in pretty boxes or jars and tie them with ribbon.
