Ingredients
CRANCHERRY SAUCE
- 12 oz fresh or frozen cranberries
- large orange zest and juice
- 1/2 cup sugar
- 1/4 cup dried cherries chopped (optional)
- 2 tbsp honey
CAKE
- 1 3/4 cups all purpose flour
- 1 cup sugar
- 1/4 tsp salt
- 1/4 tsp baking soda
- 2 tsp baking powder
- 3 large eggs
- 1 cup plain Greek yogurt
CRUMBLE TOPPING
- 1/2 cup all purpose flour
- 1/3 cup brown sugar
- 1/4 cup butter melted
Instructions
Turn the oven on to 350°F. Coat a 10-inch spring form pan with oil and flour.
Cranchery Sauce: Cook the cranberries, sugar, orange juice, and zest in a skillet over medium heat until the fruit starts to soften. Add the cherries, then decrease the heat to a low simmer until the mixture resembles thick jam. Put aside to cool.
Topping: Combine the flour and sugar in a small bowl and mix to combine. Crumble in the butter after adding it. Put aside.
Cake: Combine flour, sugar, baking powder, baking soda, and salt in a medium-sized basin or with an electric mixer. Beat in the yogurt and eggs until well blended. Fill prepared pan with batter.
Evenly distribute 1 cup of the cranberry sauce over the top. The excess sauce can be covered and chilled for later use. Drizzle the topping onto the combination of cranberries.
Bake for forty minutes.
After letting them cool for at least 20 minutes on a wire rack, take them out of the spring form pan.
