In honour of their 40th anniversary, Cracker Barrel has brought back their well-known Double Chocolate Fudge Coca-Cola Cake, if you’ve been there recently.

Cracker Barrel Coca-Cola Cake Recipe 

My husband and all of my kids are huge fans of Coke, so today I decided to bake a CopyCat Cracker Barrel Coke Cake. It’s true that this chocolate cake is among the best I’ve had in a long time. Make your own Cracker Barrel Coke Cake at home to save money if you haven’t had any before. Before you know it, you’ll be in Coca-Cola Cake heaven, hehe.

 

Ingredients

CAKE:

  • 1/2 cup Butter
  • 1/2 cup Vegetable Oil
  • 1 cup Coca-Cola
  • 2 cup Sugar
  • 2 cup Flour
  • 2 Eggs
  • 3/4 cup Unsweetened Cocoa Powder
  • 1 tsp Baking Soda
  • 1/2 cup Buttermilk, or 1/2 cup Milk and 1 tsp Lemon Juice
  • 2 tsp Vanilla

FROSTING:

  • 3 cups powdered sugar
  • 1/2 cup Butter
  • 1/4 cup Coca-Cola
  • 1/2 cup Unsweetened Cocoa Powder
  • 1/4 cup Chocolate Syrup
  • 1 tsp Vanilla

 

Instructions

Butter and dust a 13 x 9 cake pan.

Set oven temperature to 350.

 

Heat 1/2 cup butter, 1 cup Coke, and oil in a pot until they begin to bubble.

Mix sugar and flour together. Beat after adding to saucepan.

Take off the heat.

 

Add the remaining ingredients for the cake. Once combined, transfer to the ready pan.

When a toothpick put in the centre comes out clean, bake for 30 minutes.

 

In a big bowl, cream butter with 1/2 cup cocoa.

Stir in 1 tsp vanilla, 1/4 cup Coke, and chocolate syrup.

 

Add 1/2 cup of powdered sugar at a time, beating well and scraping down sides as needed.

Add a little Coke to thin down any frosting that seems too dry.

NOTES

If you’re lacking buttermilk, mix a cup of milk with half a teaspoon of vinegar and let it steep for a few minutes before using.

Keep leftovers covered in the refrigerator for 4 days or on the counter for 2 days.

 

To give the icing a little bit more crunch, add chopped nuts.

This cake tastes great warm, cold, or at room temperature.

 

You can use Cherry Coca-Cola or Dr. Pepper as alternate soda flavours for this.

For this dish, avoid using diet soda.

 

While the cake is still warm, frost it.

Accompany with vanilla ice cream.

Tips

Stir the cooked batter and frosting until they come to a boil for the ideal fudgy flavour.

To make the frosting, use a big or medium saucepan to allow space for the powdered sugar.

 

For a little extra crunch, mix in some walnuts or pecans with the frosting. Alternatively, add some chocolate chips for a triple chocolate cake with even more chocolate flavour!

 

Experiment with different soda flavours. This dish has a lovely taste of cherry coke.

For this dish, avoid using diet or zero-calorie cola.
