Ingredients :
- ½ cup butter, melted melted
- 1 cup light brown sugar
- 1Â egg
- 2 teaspoons vanilla
- 1 cup all-purpose flour*
- ¼ teaspoon kosher salt
- 1 cup shredded coconut
- ¾ cup chopped pecans
- ½ cup semi-sweet chocolate chips OPTIONAL

- ⅔ cup brown rice flour
- 4 tablespoons tapioca flour
- 3 tablespoons potato starch
Instructions :
Warm the oven up to 350 degrees. You can line an 8-inch pan with parchment paper or foil, making sure the foil is very well greased. Mix the butter and sugar in a big bowl until the mixture is smooth.
Add the vanilla and egg, and mix them together. Just until everything is mixed in, add the flour and salt. Add the nuts and coconut and mix well. If you want, you can add chocolate chips.
Fill the pan with batter and spread it out to the edges. At 25 to 28 minutes, a toothpick pushed into the center comes out with moist crumbs. The tips of the blondies should be a little brown.
Let the brownies cool in the pan for at least 20 minutes. Then, use the foil or paper to lift them out of the pan and set them on a wire rack to finish cooling. Cut them into bars and store them in a sealed container. Have fun!

Note from the cook: You can double this mix to fill a 9×13 pan. If you double the recipe, it needs to be baked for 40 to 45 minutes, or until a toothpick put in the middle comes out with moist crumbs. Cut it up into 16 to 24 pieces.
You don’t need a liner for this dish; you can just use a pan that has been greased. As easy as it is, I like to lift the bars out of the pan by the paper or foil sides and cut them while they are still outside the pan.
