Instructions :
Make the peach sauce
Take the pits out of peaches that have already been peeled.
Use a mixer to make 2 peaches smooth and puree them all the way through.
Then cut the other peaches into small pieces. Move everything to a saucepan that won’t respond. Put in sugar, cinnamon, maple syrup, and lemon juice. Vanilla bean should be cut in half vertically.
The seeds should be scraped out and added to the peaches along with the pod.
For about 15 minutes, stir the peaches every now and then over medium heat until they are soft but still have some shape to them. If you think the sauce needs more sugar, add it.
Take it off the heat and put it in a jar. Let the sauce cool down a bit, then cover it and put it in the fridge for up to three or four days.
Make the waffles
In a big bowl, mix together the flour, sugar, baking powder, and salt. Add milk and melting butter and mix well.
Last, add the eggs and vanilla paste and mix them in well. The batter shouldn’t have any lumps in it.The batter can stay at room temperature for about an hour at this time.
As directed by the maker, heat the waffle iron and lightly oil the grids with a silicone brush. Pour a lot of batter onto each waffle grid; it should fill up all the empty spots on its own.
If it doesn’t, use a spoon to move the batter to the edge. I put about half a cup of batter into each waffle.
Waffles should be cooked until they are golden and have a crisp golden brown top.
This should take about 5 minutes. Put the waffles on a plate. Add a lot of peach sauce, yogurt, fresh peaches, and nuts to the dish before serving.
Notes :
You can change how much sugar is in the sauce to suit your tastes. You may need more or less peach syrup, or you may be able to use some maple syrup instead.
Puree all 5 peaches first, then follow the rest of the method. This will make a sauce that is smooth and has no chunks.
