Instructions
Prepare the Cake:
A temperature of 175 degrees Celsius (350 degrees Fahrenheit) should be set in your oven. Two circular cake pans with a diameter of approximately 9 inches should be greased and floured. To ensure that all of the ingredients are thoroughly mixed together, place the flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large mixing basin and whisk them together until complete.
Once the dry ingredients have been mixed together, the next step is to incorporate the eggs, milk, oil, and vanilla extract. After combining everything carefully, mix it. The batter should be absolutely smooth before adding the water that is boiling, so stir it in gently. A very small amount of batter will be produced. After the cherries have been cut in half, stir them into the mixture.
Every one of the cake pans that have been prepared should have an even layer of batter spread out in it. It is recommended that the cake be baked for thirty to thirty-five minutes, or until a toothpick inserted into the centre of the cake will come out clean.
The cakes should be allowed to cool in the pans for ten minutes before being moved to a wire rack to complete the cooling process. Thereafter, the cakes should be allowed to cool completely.
Make the Cherry Filling:
Place the cherries, sugar, cornflour, water, and lemon juice in a pot of medium size and combine all of the ingredients in a stirring motion. The mixture should be prepared by heating it over medium heat while stirring it often until it turns translucent and thickens (this should take approximately 10 minutes). Put it somewhere away from the heat and wait for it to completely cool down.
Prepare the Chocolate Ganache:
It is important to put the chocolate in a bowl that is able to endure high temperatures. Increase the temperature of the heavy cream in a saucepan until it reaches a point where it begins to simmer almost completely. It is recommended that you wait five minutes after pouring the hot cream over the chocolate for it to completely settle.
It is important that the mixture be glossy and smooth. The ganache should be allowed to slightly cool down until it achieves a consistency that is consistent enough to be spreadable.
Assemble the Cake:
It is recommended that a single layer of cake be placed on a serving tray. On the top of the cake, a layer of cherry filling should be spread out by spreading it out. After the filling has been positioned on the cake, place the second layer of cake on top of it.
The ganache should be poured over the top of the cake, and it should be allowed to drip down the sides of the cake. More cherries can be used as a garnish, depending on your own preference.
