This is a quick version of chicken fried rice that is cooked with vegetables and chicken, just like the kind you get from takeout. Ingredients
- 4 cups Cooked Basmati Rice
- 2 tbsp Oil
- 2 tbsp Ginger chopped finely
- 2 tbsp Garlic chopped finely
- 4 no Green Chillies chopped finely
- 1 ½ tsp Sugar
- 1 tsp Salt or to taste
-  tsp Black Pepper Powder to taste
- 1½ tsp Soy Sauce
- 1 large Carrot juliened
- ½ large Capsicum | Bell Pepper juliened
- 4Â Egg
- ¼ cup Spring Onion chopped finely
For Chicken
- 250 grams Boneless Chicken chopped finely
- 1½ tsp Soy Sauce
- Salt to taste
- Pepper to taste
Instructions
Place the chicken in a bowl and season with soy sauce, salt, and pepper. Stir thoroughly and reserve.
In a kadai, heat the oil. Stir in the garlic, ginger, and chilies. Saute for a few minutes. Add the chicken now, and thoroughly toss. Cook for four to five minutes. After adding the carrots, simmer for an additional minute. Cook for two minutes after adding the capsicum. Add the sugar, salt, and pepper. Add the soy sauce and mix thoroughly. After adding the cooked rice, stir for about five minutes on high heat.
Now preheat a tawa, cover it with a little oil, break open one egg, and cook it until the white of the egg sets.
Transfer the rice onto a plate, then place a fried egg on top. Serve with a spring onion garnish.
Notes
To achieve a fluffy fried rice, use cold rice that is either day-old or leftover.
You don’t have to add veggies to your fried rice.
You can use frozen green beans and peas in fried rice.
Ajinomoto or MSG in tiny amounts is added to fried rice to give it a restaurant-style or takeout flavor.
Chicken cubes can be substituted with leftover cooked chicken.
You can scramble a few eggs in a pan and add them to the fried rice if you enjoy eggs with your food.
