Chicken Bacon Ranch Casserole With Potatoes Recipe  :-Today I’m going to give you a recipe for Chicken Bacon Ranch Potato Casserole. It was really wonderful!

It’s impossible to mess up potatoes, chicken, melty cheese, and bacon, right? I really think that this is one of those meals that everyone in your family will love. It’s easy to change to fit the tastes of your family!

Chicken Bacon Ranch Casserole With Potatoes Recipe

 

Ingredients :

  • 1.5 pounds baby gold potatoes
  • 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • salt and pepper, to taste
  • ½ cup prepared ranch dressing, divided use
  • 2 cups Mexican Cheese blend
  • 1 cup cooked and crumbled bacon
  • ½ cup diced green onion

 

Instructions :

Warm the oven up to 450F. Spray cooking spray that doesn’t stick on a 9″x13″ baking dish.

Cut the potatoes into cubes that are 1 inch across.

Put the diced potatoes, salt, pepper, and 1/4 cup ranch dressing in a big bowl and mix them together.

Before you put the potatoes in the baking dish, make sure they are spread out evenly. Save the bowl for the chicken.

When the potatoes are almost done (they won’t be fork-tender yet), bake them for 30 minutes and stir them every 10 minutes.

Add the chicken cubes to the bowl you used for the potatoes along with the salt, pepper, and the last 1/4 cup of ranch sauce while the potatoes are cooking. For more seasoning ideas, see my notes below.

 

Once the potatoes are done cooking for 30 minutes, take the baking dish out of the oven and turn the heat down to 400F.

Spread the raw chicken that has been marinating out on top of the cooked potatoes.

Aluminum foil should be used to cover the baking dish. Be careful, the baking dish will be very hot, so use oven mitts.

The chicken should be fully cooked and have an internal temperature of 165F degrees after 20 minutes. Put the baking dish back in the oven.

Add chopped cheese, bacon, and green onion to the baking dish after taking it out of the oven.

 

Put it back in the oven for 8 to 10 minutes, or until the cheese melts and bubbles.

 

Notes :

In the fridge, leftovers can be kept for two days in a jar with a lid.

You can also freeze it for up to two months in a container that is safe for the fridge. Let it cool down, then heat it up in the microwave.
You can use chicken legs instead of chicken breasts.

Also, don’t forget to add salt and pepper to the chicken and the potatoes. In addition, try adding some garlic powder and/or paprika to your seasonings.
