Carrot Coleslaw Recipe – Easiest Recipe Ever

This is a large wooden bowl that contains carrot coleslaw and a spoon, and it is ready to be served.
In the piece that I wrote on healthy creamy coleslaw, I said that there are moments when I have a strong desire for crisp chopped coleslaw. I find it strange that I have a need for something like that, but there is something about the crunch that is wrapped in a creamy sauce that has fresh flavors.

Ingredients

Carrot Slaw

  • 1 pound carrots, grated
  • 2 cups red cabbage, thinly sliced
  • 2 cups green cabbage, thinly sliced
  • 1 gala apple, julienned
  • 1 bunch green onion, chopped
  • 1 cup sliced almonds
  • ½ cup dried cranberries

For the Dressing

  • ⅓ cup mayonnaise
  • 4 Tbsp lemon juice or apple cider vinegar
  • 2 tsp honey
  • 1 tsp dijon mustard
  • 1 tsp dried parsley
  • 1/2 tsp sea salt

Instructions

Using a measuring cup or a small bowl, combine all of the ingredients for the coleslaw dressing and whisk them together until they become creamy. You may either put it in the refrigerator (for up to four days) until you are ready to use it, or you can put it aside while you are cooking the remaining dish.

In the event that you like your coleslaw to be drenched in dressing, you should double the recipe in order to get more dressing. One full measuring cup of the dressing for the coleslaw.

Carrots should be grated using a box grater, and cabbage should be sliced very thinly using a knife that is very sharp. Prepare the green onions by chopping them, making sure to use only the green parts of the onions and throwing away the white segments.

Prepare the apple by peeling it and slicing it into matchsticks. The carrots, cabbage, green onions, and apple should be transferred to a very big bowl, and then the sliced almonds and dried cranberries should be added to the bowl. A bowl brimming with the components of carrot slaw.

The creamy coleslaw dressing should be poured into the mixing bowl, and then the ingredients should be thoroughly combined until everything is covered in a thin layer of dressing. In order to determine the flavor of the carrot apple slaw, taste it and add additional sea salt, dried cranberries, or lemon juice according to your preferences.

After pouring the dressing into the bowl, the vegetables and other components for the coleslaw are being mixed together. With your main dish and any other side dishes that you may have prepared. You may serve this delectable coleslaw as a condiment or as a side dish option.

Add it to salads, fish tacos, burgers, hot dogs, and sandwiches, and you’ll find that it tastes really fantastic.

Notes

If you have a food processor that comes with a grating attachment, you can use it to completely grate all of the vegetables in a very short amount of time! This will reduce the amount of time invested in preparation.
You may keep the coleslaw in the refrigerator for up to five days if you store it in an airtight container (don’t worry, the apple will remain fresh!).

Even the next day, or even two to three days after preparation, the flavor of cole slaw is enhanced. Because of this, coleslaw is an excellent recipe to prepare when you have some time to spare.
