INGREDIENTS

  • 1 tbsp extra virgin olive oil
  • 3 tbsp butter
  • 2 large yellow onions (sliced thin)
  • 1 head garlic (top trimmed off)
  • 1 sheet puff pastry, thawed in the fridge overnight
  • 1 3/4 cups shredded Gruyère cheese
  • 2 sprigs fresh thyme, removed from the stem

  • A large Dutch oven or a cast iron skillet should be heated over medium heat, and then the oil and butter should be drizzled into the skillet. Put the onions in once they are heated. Cook for five minutes while stirring, and then turn the heat down to a low setting. After adding a pinch of salt.
