Caramelized Onion and Cream Cheese Stuffed Peppers Recipe

Ingredients:

  • 2 tablespoons olive oil
  • 1 large yellow onion, thinly sliced
  • 16 baby sweet peppers, halved and seeded
  • 1 8-ounce package cream cheese*, see note
  • 1 large clove garlic, minced
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon sea salt

 

Instructions:

  • Over medium-high heat, bring the olive oil to a temperature in a skillet of reasonable size. After adding the sliced onion, continue to sauté it while stirring it occasionally until it starts to gain a transparent appearance.
  • Continue cooking the onion, tossing it regularly, until it has caramelised, which should take approximately forty to sixty minutes. Reduce the heat to medium-low and continue cooking.
  • Please take note that if the onion starts to dry up or if it starts to stick to the pan at any time, you can de-glaze the pan by adding a few tablespoons of water.

 

  • Transfer the onion to a cutting board and chop it very finely once the caramelization process has been completed.
  • While the oven is preheating to 400 degrees Fahrenheit, cut each pepper in half and remove the seeds. Peppers should be placed in a mixing bowl, and then one tablespoon of olive oil should be drizzled over them. Add a pinch of salt from the sea.
  • Arrange the peppers in a single layer on a baking sheet that has been lined with parchment paper. Bake for eight minutes in an oven that has been preheated.
  • To allow the peppers to cool, remove them from the oven and set them aside.

 

  • In a mixing bowl, combine the cream cheese, diced caramelised onion, garlic, Italian spice, and salt from the sea.
  • Mix thoroughly until all of the components are thoroughly incorporated. The oven should be preheated to 400 degrees Fahrenheit if it has not already been warmed.
  • To fill the peppers with the cream cheese mixture, use a spoon to scoop it out. Proceed to bake the cream cheese for an additional eight to ten minutes, or until it reaches a golden brown colour.
  • Any additional toppings, such as chopped green onion, red pepper flakes, cheddar cheese, and/or a dollop of sour cream, can be placed on top of the peppers that have been packed.

Recipe Adaptations:

  1. You can make them vegan by adding cream cheese that is vegan.
  2. To give the cream cheese combination a little more kick, add one tablespoon of sriracha or red chilli sauce to the mixture.
  3. For an even more cheesy experience, bake the peppers with cheddar or pepper jack cheese on top during the baking process.
  4. It is highly recommended that you incorporate dried chives into the cream cheese mixture if you have either of those ingredients available. Just about one and a half teaspoons would be perfect!
  5. To make this a spinach onion dip stuffed pepper situation, sauté some spinach and then fill peppers with the spinach.
  6. Before placing in the oven, wrap in bacon.

 

 

Notes:

  • When cream cheese has been allowed to sit at room temperature for a few minutes, it is considered to be the simplest to deal with.
