- 1 medium butternut squash, peeled, seeded, and cut into 1-inch cubes
- 2 tablespoons olive oil
- 2 tablespoons maple syrup or honey
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
For the Pearl Couscous:
- 1 cup pearl couscous
- 1 1/4 cups vegetable broth or water
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin

Prepare the Caramelized Butternut Squash:
Using parchment paper, line a baking sheet and preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
