Caramel Apple Crisp Cheesecake Bars – How even should I start? A bed of crisp topping encased my favorite brown sugar shortbread, with cinnamon-dusted apples perched above vanilla bean cheesecake and brown sugar. You’re aware that this will be enjoyable! It really shouldn’t take much convincing to make these Apple Crisp Cheesecake Bars, in my opinion. Like, you should really just go make them and quit doing whatever you’re doing. Caramel Apple Crisp Cheesecake Bars –

 

Ingredients

  • 8 ounces unsalted butter, room temperature
  • 3/4 cup light brown sugar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla bean paste or vanilla extract
  • 2 cups AP flour

 

Crisp Topping

  • 1/2 cup AP flour
  • 3/4 cup brown sugar
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 3 ounces unsalted butter, cold and cubed
  • 1/2 cup rolled oats

 

Brown Sugar Vanilla Bean Cheesecake

  • 16 ounces cream cheese, room temp
  • 1/4 cup granulated sugar
  • 1/3 cup light brown sugar
  • 2 eggs
  • 1 tsp. vanilla bean paste
  • 1 Tbsp. whiskey

 

Apple Layer

  • 3 medium sized granny smith apples
  • 2 Tbsp. granulated sugar
  • 3/4 tsp. cinnamon
  • 1/2 tsp. fresh ground nutmeg

 

Instructions:

 

Brown Sugar Shortbread

  1. Set the oven’s temperature to 325.
  2. Line a 9×13″ pan with parchment paper, coat the pan with nonstick spray again, then repeat the process.
  3. Cream butter and sugar in the bowl of an electric mixer until frothy and light.
  4. Add vanilla bean paste and stir.
  5. Add the flour and salt and stir just until incorporated.
  6. After pressing the dough into the prepared pan, bake it for 20 minutes, turning it once during baking.
  7. Take out of the oven and place on a cooling rack. Increase the oven’s temperature to 350°F.

Crisp Topping  

  1. Place the flour, brown sugar, cinnamon, and salt in the food processor bowl. Just pulse once or twice to combine everything.
  2. Pulse a few times to incorporate the very cold, diced butter into the mixture until the butter resembles tiny peas.
  3. Pour liquid into a bowl, then mix in oats. Chill it until you’re ready to use it.

Cheesecake Layer

  1. Cream cheese and sugars should be combined on medium speed in the bowl of an electric mixer until smooth.
  2. Whisk in the whiskey and vanilla bean paste after adding the eggs one at a time, making sure to scrape down the basin as needed to ensure everything is well blended.
  3. Store until you’re ready to assemble.

 

Apple Layer

  1. Chop, peel, and core the apples. To ensure consistent baking, just make sure you cut them all roughly the same size.
  2. Combine sugar, nutmeg, and cinnamon with apples.

 

Assembly

  1. Over the baked shortbread crust, pour the cheesecake mixture.
  2. Add apples on top.
  3. Spread crisp topping over apples.
  4. Bake for approximately 35 minutes at 350 degrees, turning once during the baking process.
  5. After allowing the bars to reach room temperature, chill them.
  6. Lift the cooled bars out of the pan by lifting the parchment paper in order to cut them. Slicing bars into squares requires a sharp, clean knife. Bars need to be kept in the refrigerator in an airtight container.

 

Notes:

  • When making the crisp topping, it is crucial to use cold butter and to store it in the freezer thereafter. When you top the apples and bake it, you want it to be as cool as possible.
  • Granny smith apples, in my opinion, are the perfect choice for this recipe because of how well their mild tartness complements the cheesecake and how nicely they bake.
  • The shortbread can be prepared many days in advance. To use, simply wrap tightly in plastic wrap and store in the refrigerator.
