Ingredients:

  • 1 pound of pasta (spaghetti or linguine works well)
  • 2 cans of chopped clams in clam juice
  • 4 cloves of garlic, minced
  • 1 small onion, finely chopped
  • 1/4 cup of extra virgin olive oil
  • 1/2 cup of white wine (optional)
  • 1/4 cup of fresh parsley, chopped
  • Salt and pepper to taste
  • Red pepper flakes (optional, for added heat)
  • Grated Parmesan cheese for serving

Instructions:

Ensure that you have a medium-sized pot, a skillet or saucepan and a campfire or camping furnace. Pour in the white wine and allow it to simmer for a few minutes, slightly reducing the volume to concentrate the flavours, if desired.

Begin by heating the olive oil in a skillet or saucepan over medium heat. Sauté the minced garlic and diced onion until the onions are translucent and the garlic is fragrant, which should take approximately 2-3 minutes.

Bring a large kettle of salted water to a boil over your campfire or camping stove while the wine is simmering. Add the pasta and cook according to the package instructions until it is al dente, which typically takes 8-10 minutes. Drain the pasta, reserving approximately one cup of the cooking water.

Add the chopped clams (with their liquid) to the skillet after the wine has slightly reduced. Mix thoroughly to ensure that the flavours are evenly distributed, and allow them to integrate for an additional 2-3 minutes.

Season the clam sauce with salt, pepper, and red pepper flakes to your liking. Please be advised that the clam liquid may be salted, so exercise caution when adding salt until you have had the opportunity to sample the sauce.

Nutrition Tips:

In the event that the sauce looks to be excessively thick, you can adjust its consistency by gradually adding part of the pasta boiling water that was set aside until you reach the required level of thickness.

When the pasta has finished cooking, add it to the skillet along with the clam sauce and gently mix it so that it is uniformly coated. Allow the pasta to continue to simmer in the sauce for an additional minute or two, making sure that everything is thoroughly cooked together.

Following the removal of the skillet from the heat, sprinkle the chopped parsley over the pasta and give it one final toss. This will ensure that the fresh herb is distributed evenly among the noodles. The pasta should be given one last toss after the skillet has been removed from the heat.

The camping pasta with clam sauce should be served hot, and an optional garnish of grated Parmesan cheese could be added if desired. In the company of a glass of wine and a slice of crusty bread, you can take pleasure in your rustic outdoor meal while gazing at the stars.
