Ingredients

  • 10 tablespoons (142 grams) unsalted butter
  • 4 ounces (113 grams) semisweet chocolate, chopped*
  • 1 cup (200 grams) granulated sugar
  • 2 large eggs plus 1 egg yolk
  • 1 teaspoon vanilla extract
  • 3/4 cup (95 grams) all-purpose flour**
  • 1/4 cup (25 grams) unsweetened cocoa powder
  • 1/4 teaspoon fine salt
  • 1 cup (170 grams) semisweet chocolate chips

Instructions

Set oven temperature to 350°F. Put parchment paper into an 8-inch square metal pan.

Butter and chocolate should be combined in a sizable microwave-safe bowl.

Stir the ingredients between each 30-second microwave burst until it is smooth and melted. When the butter mixture is heated, add the sugar and whisk vigorously until incorporated. Let cool to a barely warm temperature.

Whisk the eggs, egg yolk, and vanilla essence together for approximately 60 seconds, or until thoroughly blended. This contributes to the top crust’s shine.

Add the flour, cocoa powder, and salt and whisk just until incorporated, using a rubber spatula. Add the chocolate chunks and stir.

Transfer to the ready pan and level off. Bake for 25 to 30 minutes in a preheated oven, or until a toothpick inserted in the centre comes out covered in moist crumbs. Before slicing, let the pan cool for thirty minutes.

Recipe Notes

By using chocolate chips rather than chopped baking chocolate, you can simplify this recipe even further. Just replace the chopped chocolate with 2/3 cup of semisweet chocolate chips. Just make sure to use premium chips!

Make sure you use a digital scale to weigh your ingredients, or measure your flour and cocoa using a spoon and level. Brownies that are very thick, dense, or cakey will be dry.

How Long to Bake Easy Brownies

Do NOT overbake brownies. There should still be moist crumbs attached to a cake tester or toothpick by the end of the baking time. I find that 25-30 minutes results in perfectly baked brownies. Err on the side of under-baking here.

How to Store Best Easy Brownies

The brownies definitely taste best the day they are baked, but can be stored in an airtight container for up to 2 days at room temperature or up to 4 days in the fridge. They are even more fudgy when they’re chilled! If you prefer, you can microwave them for a bit to serve them warm too.
