Ingredients

For the Fritters

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons granulated sugar
  • 1/2 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • 1 cup fresh peaches, diced
  • Vegetable oil, for frying

For the Vanilla Glaze

  • 1 cup powdered sugar
  • 2-3 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

Whisk the flour, baking powder, salt, and granulated sugar together in a large bowl.
First, beat the egg in a different bowl. Then, add the milk and vanilla extract. Mix everything together well.

Slowly add the wet ingredients to the dry ones while stirring just until everything is mixed. Don’t mix it too much; a few lumps are fine.

 

Add the blueberries and diced peaches slowly, mixing them into the batter until they are spread out evenly.

It takes about five minutes for the vegetable oil in a large skillet or frying pan to reach 350°F (175°C).

 

Drop small amounts of batter into the hot oil with care, being careful not to crowd the pan. You can use a spoon or a cookie scoop for this.

For two to three minutes on each side, or until golden brown and fully cooked, remove from the oil.

 

When the fritters are done, take them out of the oil and put them on a plate lined with paper towels to drain any extra oil.

To make the vanilla glaze, mix powdered sugar, milk, and vanilla extract in a small bowl with a whisk until the mixture is smooth and easy to pour.

 

Put the sauce on top of the hot fritters and wait a few minutes for it to set up before serving.

 

Tips for Recipe

For the best taste, use fruit that is fresh and ripe. You can use frozen peaches if they aren’t in season, but make sure to let them thaw and drain first.

Adding more or less powdered sugar lets you change how sweet the glaze is to your taste. Keep the oil at the same temperature while you fry the fritters so they cook evenly. To be sure, use a candy thermometer.

The fritters taste best when they are warm, but you can keep them at room temperature for up to two days in a sealed container. Before serving, heat it up again in the oven or microwave.
