Ingredients :

For the burgers :

  • 9 ounces halloumi cheese, 1 ‘log’ = 250 grams, sliced into 6 slices lengthwise
  • 2 tablespoons flour, (roughly)
  • 0.5 inches oil, in a small saucepan
  • 0.25 cucumbers, peeled
  • 0.5 carrots, peeled
  • 2 burger buns, (I like to use brioche buns)
  • 1 handful salad leaves, (I used rocket and spinach but any lettuce/greens is fine)

For the mayonnaise :

  • 4 tablespoons mayonnaise
  • 2 tablespoons sweet chili sauce

Instructions  :

Get the oil hot enough that when you dip the end of a halloumi in it, it pops.
Spread a thin layer of flour over each slice of halloumi cheese.
Put the halloumi into the oil carefully, two at a time. Cook for two to four minutes, or until both sides are golden brown. You can flip it over halfway through cooking if you want to, but you might not need to.
Peel the carrot and cucumber into thin strips with a veggie peeler. Combine the two.
Take the halloumi out of the oil and let it drain on cooking paper for a minute or two while you make the mayo and hoagie buns.
Toast the buns a little. Mix the mayo and sweet chili sauce at the same time.
Put the burgers together. On the bottom of the bread, spread some mayonnaise. Then, put some salad leaves on top.
Put two fried slices of halloumi on top of each burger, and then add a handful of cabbage and carrot.
Lastly, add more mayo to your liking and cover with the burger’s top half. Have fun!

Notes :

What to serve with them: These halloumi burgers taste great on their own, but they also go well with Greek potatoes, sweet potato fries, or Mediterranean roast veggies.
Sauce: Just add a little more sweet chili sauce to your mayonnaise if you want your burger to have a little more “zing.” You can also use tzatziki, Caesar sauce, or ranch dressing instead.
Where to buy halloumi: Usually found in stores, but if you can’t find it there, try a European-style deli. You could try Trader Joe’s in the US. You can use queso para freer instead!
