Instructions

To begin, melt the butter in a big skillet at a heat setting of medium-low. For around four minutes, add the shallots and cook them while tossing them often until they become translucent and tender. Continue cooking for one more minute while stirring regularly after adding the garlic. Do not turn brown. After adding the heavy cream, salt, pepper, and nutmeg, let the mixture come to a boil over low heat.

Cook the cream, uncovered, stirring it regularly, for approximately ten minutes, or until it reaches a consistency that allows it to coat a wooden spoon. When the cheese has melted, add it and toss it in. Stir the spinach into the cream sauce until it is equally distributed throughout the mixture. Test the seasoning, then make any required adjustments.

 

If the spinach appears to be a bit watery, reduce the heat to medium-low and continue cooking until any excess liquid evaporates. Serve when still heated. It is important to note that chopped spinach is not the same as cut leaf spinach. If the market you frequent does not have cut leaf spinach, you should look for frozen leaf spinach that is entire. (You can use chopped spinach, but the texture won’t be as pleasant as some other options.)

There are some markets that sell one-pound bags, and there are others that sell ten-ounce boxes; if you can only see the ten-ounce boxes, you will need three of them. For those who are interested in beginning with fresh spinach, you will require approximately two pounds of baby spinach leaves. After the young spinach has been steamed and drained, it should be roughly chopped and then measured out into two cups.
