INGREDIENTS
- 2-3 poundsboneless skinless, chicken breasts or chicken tenders
- 16-ounce packagesliced bacon, thick cut or regular
- ⅔ cupfirmly packed brown sugar
- 2 tablespoonschili powder
- 1 teaspoonsalt
- ½ teaspoonblack pepper
- ¼ – ½ teaspoondried oregano
- ¼ – ½ teaspoonthyme
- ¼ – ½ teaspoongarlic powder
- ⅛ – ¼ teaspooncrushed red pepper flakes
INSTRUCTIONS
Set oven temperature to 350°F. If you have one, put an uncovered metal cooling rack inside a large rimmed baking sheet lined with foil, then give it a light spray of cooking spray. If not, lightly coat a baking pan or broiling pan with nonstick cooking spray after lining it with foil.
The chicken breasts should be cut into big, bite-sized pieces. If you want to use chicken tenders, split them in half. To make the wrapped chicken tender pieces thicker, you can fold them over. Toss the chicken pieces with the red pepper, garlic powder, oregano, thyme, salt, and pepper in a medium-sized bowl. While you prepare the remaining ingredients, leave it out (you can cover and refrigerate for up to a day).
Combine the chilli powder and brown sugar in a small bowl. Divide the bacon slab in half lengthwise.
Each piece of chicken should be securely wrapped with a short strip of bacon before being dredged in the mixture of brown sugar and chilli powder. Arrange the chicken pieces on the baking sheet (or rack that is within the baking sheet) in a single layer. If the bacon isn’t sticking, use a toothpick to hold it in place.
Bake for 20 to 25 minutes, or until the chicken is cooked through and the bacon is crisp. If the chicken is lying flat on the oven sheet, flip it once. Serve right away.
NOTES
Seasonings: Don’t scrimp on the seasonings you put to the chicken in the bowl, especially the salt and pepper. One of the secrets to this chicken’s amazingness is to make sure the chicken is well-seasoned before wrapping the bacon around it. The next time, I might even think about lightly seasoning the chicken/bacon just before baking.
