Barbecue Chicken Sweet Potato Sliders Recipe – Learn like a Pro: These sliders, made with barbecued chicken and sweet potatoes, are tasty, simple, and covertly nutritious. Barbecue Chicken Sweet Potato Sliders Recipe – Learn like a Pro

Ingredients

  • 3 large sweet potatoes, sliced into 1/2-inch thick rounds
  • 1 lb of chicken breasts, 3 boneless and skinless breasts, or 3 – 4 cups of shredded rotisserie chicken
  • 1 – 2 tbsp olive oil, if using raw chicken breasts
  • ¾ cup chicken broth, if using raw chicken breasts
  • 1 tsp salt, or to taste
  • ½ tsp black pepper
  • â…” cup BBQ sauce, more if desired (I love Stubbs)
  • ½ tsp paprika
  • ¼ tsp cumin
  • 1 tsp red chili flakes or cayenne pepper, optional if using a mild BBQ sauce
  • 2 cups of dry coleslaw mix, without dressing
  • 1 tbsp apple cider vinegar
  • 1 tbsp fresh lemon juice, about 1/2 a lemon
  • 1 tbsp olive oil
  • 1 tsp Dijon mustard
  • 1 clove of garlic, pressed or minced
  • ¼ cup cilantro, roughly chopped
  • Salt and pepper to taste

 

Instructions

Each sweet potato round should be uniformly arranged on the baking sheet after being lightly seasoned with salt and pepper and brushed or sprayed with olive oil on both sides.

After roasting for 20 to 25 minutes, turn the sweet potato rounds after 15 minutes. The rounds should be crisp and browned, and you should be able to easily puncture them with a fork.

 

The sweet potatoes will get mushy if they are overcooked rounds of sweet potatoes, both raw and cooked, side by side. If using rotisserie chicken, use two forks to properly cut the bird, remove the skin, and shred it. Utilise both the thighs and the breasts to make around 3 cups of chicken shreds.
